SUNNY AUTUMN SALAD
Ingredients (2 persons)
Baby Spinach & young salad sprouts
Multicolour Cherry Tomatoes
Crisp Apple
Radish
Radish Sprouts
Feta
Savoury granola: GR’EAT Glory
Basil
Balsamico Cream
A perfect recipe for Indian Summer, refreshing & crisp!
Preparation:
Prepare the dressing (here’s my favourite dressing recipe):
Whisk the ingredients, by incorporating the ingredients in the following order:
1 tbs ancient mustard
3 tbs olive oil
2 tbs balsamico vinegar
1 ts honey
Multicoloured pepper
Place the salad in a bowl & mix with dressing. Place in a deep plate.
Finely cut the apple length-wise, cut the cherry tomatoes in two, finely slice the radish lengthwise.
Add the young radish sprouts, crumble the feta (baked it 15 min at 180°C with thyme in the oven… delish!).
Sprinkle with savoury granola (I use GR’EAT Glory)
